I cancelled a shipment because I needed to add more postage. However, it doesn't reappear in my orders and although I have changed the order status in my store, I still can't make it appear. Can you point me to the guide, or make the order we appear to create a shipment from that cancelled order and if there is no guide I think it would be beneficial to make one.

Never mind, anyone who doesn't know its "create a duplicate label" and be sure to change the information you need to change because it won't go to the previous page it will just be at the "ready to pay" page

You're correct that the Duplicate Label option is the best tool for creating a new unique label from a previous shipment. However, you can also edit the shipment details further. Once you've sent the order to the Ready for Payment page, click on the pencil icon. This will allow you to fully edit your carrier selections (and address) on the Ready to Ship page.
