I do not like the condition shown in parenthesis at the end of the item description. How can I remove that?

I can assure you that this item condition note is not part of the name of my items from the selling sources. It is being appended to the title by the ShippingEasy software when orders are processed and I do not want that to happen.
I understand why this might look to be the case, but I can assure you that ShippingEasy is not appending any condition information to the titles of your items. While you may not be adding that information yourself, it is something that is commonly sent from the eBay and Amazon platforms.
Unfortunately we do not currently have an option to strip that information from your Orders or remove it from your Shipment Line Items.
It would be great, however, if you could add your comments to this thread in our Feature Requests section, so it's easier for our CEO and Product Manager to monitor incoming requests.
We really appreciate you taking the time to post your feedback and feature requests so that we can continue to improve ShippingEasy.
Count me in on this fix; we are a food ingredient company and having the '(new)' condition show up on packing slips is disconcerting to our customers as it implies that we also sell '(used)' food.

The information in parenthesis that you mentioned appears to be part of the name of your items.
We do not currently support editing Line Item names/descriptions in Packing Slips.
However, we have an active thread in our Feature Request forums discussing this feature:
In general, we prioritize any new features based on overall interest that we hear from our customers through all our channels. Posting in our forums is a great way to voice your interest, but it helps us tremendously if we can keep discussion for a feature to a single thread.
