I would like to add "item name" to printing label, but it's too descriptive, and our customers need privacy. SKU is also too descriptive. I see that it's possible to edit the inventory screen and change the "item name". If I do that and change the name, will it mess anything up? Is item name tied together with the stores, and it will not recognize the item if item name is changed?

To answer your question: the item name you are referring to only affects what is shown on the customs form.
So in order to change what displays on the label, you would have to adjust that in the backend of your store platform (not within ShippingEasy).
Once you change it on your store platform then it will sync over and show that on the label per your label settings.
