How do I change it so that the order confirmation email looks like it's coming from ME and not Shipping Easy? When I did the test email, the originating email was "noreply@shippingeasy.com" and to me, that looks unprofessional.

Unfortunately, we do not currently have an option to change the "noreply@shippingeasy.com" email to reflect an alternate email.
We have an existing feature request post, though, to add this option:
