Right now it defaults to order # which places like Amazon that gives random numbers this doesn't work for.

Are you wanting this on the Orders page or Shipping History? You should be able to change the sort order on either of those pages. Specifically, on the Orders page, you can sort by ascending or descending "Created" date. Please see how to change sorting order from the Orders page.
If I am misunderstanding your request, can you please clarify?
